This Spanish dish transforms all the authentic Spanish Paella ingredients that we know and love into a delicious and unique cold salad.  Salad dressing is not required or recommended!

This dish is especially enjoyable when you’re craving the delectableness of a Spanish Paella but it’s over 100 degrees outside!  No one wants a bowl of steaming hot Paella when the weather turns hot!

Well, no one that is except my family.  We could eat Paella any time!  My brother and his wife recently made the most amazing traditional Spanish Paella!  And, it was delicious!

With this Paella Salad recipe, we can now have the taste of Paella in the summer!

This Paella Salad is not served warm like the classic Spanish Paella but it’s equally delicious!

And, this salad is a complete and filling meal in itself.

The chicken, shrimp and chorizo are the main stars of this dish and when combined with the mouthwatering tomato sauce and crisp vegetables, they provide for a unique taste combination unlike any other.

But, this Cuban Paella Salad is also a terrific dish to serve company. It has a lovely presentation especially when served in an authentic paella pan.

And, you wouldn’t be rushing around at the last minute trying to cook your guests dinner. You can make this dish in the morning, chill it in the refrigerator during the day and serve it in the evening. It’s actually better that way!  And, then you can focus more on your happy guests and the many rave reviews you’ll receive after they taste this different and flavorful dish.

All you would need to add for an unforgettable meal would be a good glass of white wine, toasted and buttered Cuban bread and perhaps a light dessert (such as my sister’s caramel flan)!

Cuban Paella Salad

Instructions
  1. In medium bowl, gently combine the rice with the cooked chicken, green onions and shrimp.
    Combine rice, chicken, shrimp and green onions.
  2. Heat a large sauté pan and add the olive oil. When oil becomes heated, add the garlic and green pepper and sauté for only 1 minute. Then, add the tomatoes, paprika, cumin, salt and pepper, and saffron threads. Bring to a boil and cook for about 4 minutes at high heat, or until mixture thickens. Remove from heat and cool about 5 minutes.

  3. Add tomato mixture and chorizo to rice mixture and combine well.
  4. Chill thoroughly. Serve over a bed of spinach leaves and garnish with lime.
