Friends, Texas folks like to gather!  We do!

And when we Texans get together, we have FOOD!  Lots of delicious mouth-watering food!

Now, you’re probably asking yourself how a Crafty Cubanita came to consider herself a Texan?

Well, it happens after living in a state for the majority of my life.  It’s where I went to school and where I gave birth to my kids.  Texas is my home; it’s the home I know.  And, I love this state for accepting me and welcoming me with big open arms. I’m forever grateful and loyal.  I’m proud to be a Texan (a Texas Cubanita, that is). And, though I have considered living elsewhere for one reason or another, I never have and it’s very likely I never will.  I’m likely a Texan for life. Yee Ha!

Do I sound like a commercial for Texas? Ha! 

So, especially since I’m from Texas, I’m always looking for a special recipe that I can serve family and friends when we get together.  And, delicious recipes, like this Chicken Salad with Grapes recipe, are proudly served over and over. They are tried-and-true goodness.

It’s one of those dishes that Texans love. It’s delectable on its own on a bed of leafy green lettuce or between two hearty pieces of multi-grain bread.  You will often find chicken salad at outdoor picnics, church gatherings, family reunions and women’s luncheons. Texas women believe if you have chicken salad on the menu, they will come!  And, they usually do!

This creamy but healthy Chicken Salad with Grapes recipe is a good one.  It’s flavorful and creamy, yummy goodness that you must try!

And, it’s a chicken salad that you won’t feel bad about eating since it isn’t as fat laden as most. Granted, it does have mayonnaise but it’s the low-calorie kind. And, the low-cal mayonnaise is mixed with yogurt and light sour cream which makes it exceptionally delicious and creamy and not as fatty as traditional chicken salad recipes.  So, it helps all those Crafty Cubanitas who are trying to fit into their skinny jeans.

Oh and my Weight Watcher’s calculator says it has 7 points per serving.

One last note, if you don’t have good grapes available at the grocery store, you can substitute Craisins.  Craisins are a tasty alternative to the grapes even though it’s not as healthy.

Delicious and Healthier Chicken Salad
Instructions
  1. Poach chicken until tender in enough stock or water to cover. It only takes about 15 minutes or less to poach the chicken. Cool, dice, sprinkle salt & pepper to taste and set aside. Note, don't overcook the chicken or it will toughen!

  2. In small mixing bowl, combine sour cream, yogurt and mayonnaise. Blend well.

  3. Chop the grapes, celery, green onions and parsley (parsley is optional). Combine the reserved chicken with the chopped grapes, celery, green onions and parsley. Add the roasted pecans and the mayonnaise, yogurt and sour cream mixture. Mix well and refrigerate for one hour or longer.
