Baked Rice and Green Chili Recipe

My husband loves this Baked Rice and Green Chili Casserole!

He loves all things rice and pasta.  He would have rice every night if he could.  We don’t have rice every night, of course.  But, he loves rice THAT much.

So, when I pulled this recipe out of my recipe archives and made it, he was such a happy man!

This baked rice and green chili casserole is creamy and flavorful. It’s the perfect accompaniment to steak, baked chicken or fish.  It’s even a nice dish for company or to take to a potluck.

So, of course, I’ve been making it a lot lately which is OK by me.

It’s EASY.

It just uses four ingredients – cooked rice, chopped green chilis, sour cream and Monterrey Jack cheese.  (It needs salt too.  But, I don’t count salt as an ingredient:).

And, this Baked Rice and Green Chili Casserole is not expensive to make.

I’ve even turned it into a main dish before by layering rotisserie chicken in it.  Yum!  Just follow my recipe and add 2 cups (or so) of rotisserie chicken over the first two rice layers.  It’s equally yummy and a bit more filling.

And, before I forget to give credit to the recipe goddess who invented this recipe, I discovered a modified version of this recipe in a West Texas cookbook called the Blue Denim Gourmet.   The Blue Denim Gourmet was THE cookbook if you lived in the West Texas area in the 80’s.  At least, it’s the cookbook that I grew up using and one that I still use a lot.

Delish Baked Rice & Green Chili Casserole
Instructions
  1. Combine drained chilies, sour cream and salt. Set aside.
  2. Place 1 cup cooked rice in the bottom of a 1 1/2 quart casserole. Spoon a third of the sour cream mixture over the rice, then top with a third of the cheese. Repeat this twice.
  3. Bake at 350 for 20 minutes, covered; uncover and bake for an additional 10 minutes. Don't overcook it. Note that this casserole may be frozen unbaked. Just defrost it and bake it when you're ready to use it.
